Assistant General Manager (AGM)
Duties and Responsibilities:

Assisting the GM with recruitment processes
-
Maintaining a thorough knowledge on all Boat Brae F&B offerings and ensuring consistency in terms of quality, ingredients and portion sizing
-
Providing regular F&B Training for FOH in cooperation with GM
-
FOH rota planning
-
Assisting GM with hour and holiday tracking
-
Assisting with weekly wet, sundry and cleaning product orders
-
Ensuring FOH cleaning rotas are being followed thoroughly
-
Assisting with digitalised stock takes via Tabology
-
Assisting with function planning and management
-
Liaising regularly with the GM regarding staff conduct management and supporting decisions made
-
Tabology updates and management
-
Menu updates (paper and website)
-
Assisting with onsite organisation and order; regular clear outs
-
Ensuring compliance with licencing, health, safety and hygiene legislation/guidance
-
Assisting the GM in maintaining budgets and working towards targets
-
Enforcement of good waste management and sustainable working procedures
-
Second point of contact for incoming customer enquiries and complaints; appropriate referral
-
Assisting the GM in dealing with FOH staff queries and issues
-
Becoming proficient in use of online systems – e.g WorkForce, ResDiary, VoucherCart, Tabology, Zettle; making contact to resolve issues
-
Having an awareness of onsite utilities – eg heating, electrics; appropriate referral
-
Adhering to and enforcing data protection procedures
-
Assisting the GM with continual file/data management and organisation – paper, electronic
-
Taking shared responsibility for correspondence checks on days off
-
Boat Brae AGM Skills/Experience

Extensive F&B knowledge
-
Ability to look at the overall picture as well as details
-
Ability to confidently delegate duties
-
Ability to confidently deal with poor staff performance and staff misconduct

Highly organised in terms of onsite areas, paperwork and electronic files
-
Passionate about food and drink, taking an active interest in new trends
-
Competent with online and cloud-based platforms/accounts
-
Personal licence holder
Ability to commute/relocate:

Fife, DD6 8EX: reliably commute or plan to relocate before starting work (required)
Experience:

Supervising experience: 3 years (required)

Restaurant management: 2 years (required)

Chef de Partie
Competitive salary and attractive rotating work schedule (43hrs/wk) with two half days & three full days. Every third Friday off.

Prepare and cook menu items in accordance with established recipes and guidelines

Set up and stock stations with all necessary supplies
-
Ensure food is prepared and served in a timely manner
-
Follow proper food handling and sanitation procedures
-
Collaborate with the kitchen to ensure smooth operations
-
Assist with events and functions as required
-
Ensuring full compliance with all legal hygiene and safety requirements
-
Updating all kitchen paperwork in a transparent fashion as stipulated by management
-
Working in compliance with targets set by directors
-
Supervising all food preparation and presentation to ensure consistency in product content, size and quality

Clearly organising and labelling kitchen ingredients and food items
-
Complying with wastage and stock procedures; ensuring minimum wastage

Assisting with purchase orders
Skills/Experience:
-
Previous experience as a line cook or in a similar role necessary

Experience in various kitchen stations
-
Knowledge of food preparation techniques and kitchen equipment
-
Ability to work in a fast-paced environment and handle multiple tasks simultaneously Strong attention to detail and organisational skills

Kitchen Porter

Washing and stacking of dishes, crockery and cooking equipment
-
Basic food preparation
-
Receiving and putting away stock deliveries
-
Ensuring continual stock rotation; ensuring all items labeled
-
Sweeping and mopping kitchen and KP room floors at the end of the night
-
Regular sweeping and mopping of service stairs
-
Ensuring the kitchen and storage areas are properly cleaned and sanitised in accordance with health and safety standards
-
Regular sweeping and cleaning of outdoor bin area; cleaning premises bins
-
Following laundry and waste disposal regulations
-
Carry out daily/weekly cleaning duties as stated on cleaning schedule
-
Maintaining order and organisation of all kitchen areas
-
Deep cleaning of all kitchen areas
Requirements:-
- Previous experience in a kitchen or food service environment is preferred
- Knowledge of basic food handling and safety practices.
- Ability to work in a fast-paced environment and handle multiple tasks simultaneously
- Strong attention to detail and cleanliness
- Excellent communication and teamwork skills
- Commitment to work evenings, weekends, and holidays as required
